So today is day two. I opened yesterday and let it open up for a half an hour. Cheese and olives and this wine performed wonderfully. I was just enjoying the wine instead of trying to dissect the flavors. It was fantastic. Ok now this morning I fixed pancakes and bacon with some grilled peaches, I had two glasses left in the decanter and decided to poor one. I know it’s two early but… It’s Sunday. So I enjoy a glass that had been opening up for 8hrs and tasted it with a strip of bacon. WOW. Completely open and delicious. Full of fruit, well balanced tannins and just juicy. It was fabulous.
At about 8pm I decided to finish what was in the decanter. All the alcohol was right at the top and I couldn’t really get my nose in it. I dumped it and poored the last glass that was left in the bottled that was vacuum sealed and drank with a blackened chicken Alfredo. EXCELLENT. What a fabulous bottle of wine. A solid 8.25 for me.
I must say this is a very lively and complex Cabernet. The aromas are fabulous, all the flavors are fabulous yet still contained. To many for me to name without really knowing what I’m talking about or just copy and pasting from some wine website. Really consistent all the way to the finish. You can began to taste the earth in this wine. Yes… You can taste the dust in this one. I paid 24 for this one and can’t wait to taste it again tomorrow after it has evolved even more. I give it a 7.5 out of 10 because I really like it, but Its missing the new oak upfront that I am so much in love with. With the right paring it could easily move to an 8. Or maybe after I let it open up a bit more. I could see myself buying a case.
Full of fruit up front with fantastic notes of black cherry. The classic new oak of Nappa Cabs is well integrated. Smooth finish. Day 2 of this was great with less oak then day one. Definitely give it at lease 30 minutes to decant. But you can tell it will be good out of the bottle. The finish is only ok. My 1 to ten rating is 6.5. Would buy again but would never consider purchasing a case.
